Why curing your KC Oven matters more than you think
Where owners can run into trouble is during the curing stage. Curing is the process of lighting a series of small, controlled fires over several days to drive residual moisture out of the clay and refractory cement before the oven is used at full temperature. KC Premium recommends three to five low fires over three to five days, each lasting around four to five hours. It is not glamorous work, and the temptation to push the temperature higher and get cooking sooner is real. That temptation is worth resisting.
What is happening inside the KC dome?
Refractory materials expand when heated to 750 or 900 degrees Fahrenheit, then contract as they cool. That cycle of movement creates tiny stress lines, most commonly between the flue and the arch, around the vent opening, and along the curve of the dome itself. None of it is deep enough to affect how the oven holds heat or how it cooks.
Rushing the curing process, or overloading the oven with wood too early, is the most common cause of cracking that goes beyond the cosmetic. A hairline crack at 0.040 of an inch is normal. A crack wider than 0.080 is not, and it is almost always the result of too much heat too soon.
The good news is that larger cracks are rare when curing is done properly. And even when they do appear, they can be repaired with refractory cement or a little bit of mortar. Cracks are a sign that the oven is doing what refractory materials do under heat. The only cracks worth watching are the wider mortar cracks, and those are easy to fix with the right product at the right time. Everything else is part of the territory.

- Overheating or over-firing the oven.
- Failure to follow proper curing instructions.
- Exposure to rain or weather without proper protection or covering.
- Normal wear and tear from regular use.
- Hairline cracks caused by heat expansion and contraction.
- Cosmetic changes that do not affect oven performance.
- Impact damage caused by dropping tools, logs, or heavy objects inside the oven.
- Improper installation.
Curing Your Oven (Required Before First Use)
Your KC Premium Pizza Oven is constructed from refractory materials that contain natural moisture from the manufacturing process. This moisture must be slowly removed before cooking at high temperatures. This process is called curing and is essential to prevent thermal shock and cracking.
Curing Instructions:
- Light a small fire inside the oven.
- Cure the oven for over 3–5 days.
- Each fire should burn for 4–5 hours.

Important tips:
- Keep the oven door slightly open during curing.
- Fire should be small and steady, not roaring.
- If you see steam, that’s normal — moisture is leaving the oven.
- If you see cracks, the temperature increased too fast.
- After Day 5, Day 6 and later, you can start taking the oven to cooking temperature (700–900°F).
Do not cook at full temperature until the curing process is complete.
Protecting Your Oven
To ensure a long lifespan:
- Always keep your oven covered when not in use if installed outdoors.
- If your oven is not installed under a roof, use a waterproof cover.
- After curing, you may apply a waterproof sealer to the exterior render.
- Keep the oven door slightly open when not in use to prevent moisture buildup.
Proper Use Guidelines
- Do not overload the oven with excessive wood.
- Your oven is designed for cooking, not for continuous heating like a fireplace.
- Overheating can cause internal damage and excessive cracking.
- Always heat the oven gradually.
Cleaning Your Oven
- After cooking:
- Move remaining embers and ash to the front of the oven.
- Leave the oven door off overnight to allow moisture to escape.
- Clean the floor with a damp cloth, towel, or oven brush.
- Remove food residue before the next use.
- Keep the door closed when the oven is not in use.
Oven Floor Bricks
- Floor bricks are installed on an insulation layer and may not be perfectly level at first. This is normal and often settles after several uses.
- If adjustment is needed:
- Remove the bricks.
- Level the insulation base.
- Reinstall bricks evenly and tightly together.
- Do not use mortar between floor bricks.
Oven Cracks
- Hairline cracks are a normal part of all traditional refractory ovens. These occur due to heating and cooling expansion and contraction, and do not affect the performance or safety of the oven.
- These cracks are cosmetic and are not covered under warranty.
- If desired, exterior cracks may be sealed using a high-temperature exterior silicone or covered with exterior render or sealer after the oven has fully cured.
Floor Tile Cracks – Possible Causes
- Heating the oven too quickly.
- Overheating before proper curing.
- Moisture inside bricks.
- Dropping heavy items on the oven floor.

- Avoid water on hot oven surfaces.
